I Love Potlucking.

March 20th, 2008

Turns out potlucks aren’t just good for my wallet (and they are!). The benefits keep on coming: I’m cooking again (hooray!), I’m bonding with my workmates, and I’m learning a little about creativity.

What have I been making?

Well, first there was the challah bread, then the knock-off Red Lobster biscuits. Next up: my favorite, trusty, delicious Greek chicken pitas. Tomorrow, the department potluck is on hold while we celebrate a baby shower–I’m bringing a fruit salad (gingered, from the Better Homes & Gardens book).

Cooking is fun, I’m remembering.

    I don’t potluck very often, but in the spring/summer months, my favorite item to offer to bring to a party is pasta salad. I think this is mainly because of my own love of pasta salad, but I feel like I have to have a reason to fix it. Mmm, love me some pasta salad!

    Well, my signature “dish” is hummus…but I mostly do it to annoy my boyfriend, who makes fun of me because my family has hummus at EVERY party we have. What can I say…I love it! (and its super easy to make. People are always impressed when I tell them I made it myself! Let me know if you need an easy recipe!)

    Another is a Tuna/pasta salad. Its very refreshing, and again…easy! (Tuna, pasta, mayo or plain yogurt if you want it to be healthier, pepper, and tons of garlic!)

    Now, if you want to get more complicated you can make my aunt’s famous spaghetti casserole…but I’m not going to publish that recipe on the net. Its a family secret! (But and I’ll share it with you if you ask ;-)lol. Its actually not THAT secret, nor that complicated. )

    I want the hummus recipe. I LOVE hummus. They have it at a little Greek restaurant down from my house and I crave it all the time. Too bad I am trying to cut out eating out. Yummy!

    My signature is a Cranberry/Pear crumble. The recipe has been in the family forever, though I think it’s from a magazine. It’s best in the fall (it’s our cranberry dish at Thanksgiving), and I often bring it back around Christmastime too.

    Also, whenever I host a potluck/girls night/etc. I make a classic: onion dip with potato chips. I can’t help it. Too good.

    Oh, and deviled eggs.

    Oh, and cookies.

    Oh, and maybe a cake.

    @QL girl & pennypincher: I loooove hummus. I have the supplies to make it (I think), but just haven’t gotten around to it. I love the hummus at California Pizza Kitchen. Their pita is delicious too. I may try making my own pita one day.

    My staple potluck bring is a hot spinach and artichoke dip, served with pita. It is SO tasty!!!

    Hey, GG:

    I LOVE potlucks, too! Depending on the time of year and occasion, I’ll bring mashed potatoes, penne arrabiata, chili, or some other easy-to-make dish.

    I’ve got a recipe section on my site, and this weekend I’m going to be adding a few more recipes. :)
